Olive-Oil Green Vegetable Feast (Zeytinyağlı Yeşil Sebze Şöleni)

Ingredients

  • 4 artichokes
  • 1 soup bowl shelled fava beans
  • 1 soup bowl peas
  • 1 medium dry onion
  • 3 spring onions
  • ½ small cup (~100 ml) olive oil
  • 1 small cup (~100 ml) orange juice
  • ½ bunch dill
  • Salt

Instructions

Blanch the shelled fava beans and peel off their skins.

Wash the peas and drain them in a colander.

Dice the dry onion, and cut the spring onions into 2 cm pieces.

Wash the artichokes, cut them in half, then julienne into 1 cm wide strips.

Cooking

Put the onion, peas, artichokes, and fava beans into the pressure cooker.

Add the orange juice, olive oil, and salt. Stir and close the lid.

Cook over medium-high heat until the steam indicator rises, then cook for 4 more minutes over low heat.

Open the lid and quickly transfer to a serving plate so the vegetables don't overcook. Then sprinkle a pinch of dill on top.

Note: If cooking in a regular pot, once it starts boiling, cook over low heat for 20 minutes.
