Olive-Oil Artichokes with Orange (Zeytinyağlı Enginar)

Ingredients

  • 4 artichokes
  • 1 small cup (~100 ml) peas
  • 1 small carrot
  • 1 small potato
  • 1 small onion
  • 3 oranges
  • ½ bunch dill
  • 6 tbsp olive oil
  • 1 tsp salt

Instructions

Wash the artichokes thoroughly, taking your time.

Peel the onion and finely dice it into a bowl; wash and peel the carrot and potato and cut them into very small cubes, then add the peas and combine in the bowl.

Add the oil and salt over these vegetables and mix with a spoon.

Cooking

Arrange the artichokes in the pressure cooker with the hollow side facing up.

Using a spoon, fill the artichokes generously with the vegetable mixture so that it mounds over the top.

Add the freshly squeezed juice of 3 oranges to the pot, close the lid, and place it on the stove.

Cook over medium-high heat until the pressure indicator rises.

Once the indicator rises, cook for another 5 minutes and turn off the heat.

After waiting a little, release the steam and carefully transfer to a serving plate.

Sprinkle with finely chopped dill on top and let cool.
