Artichoke Soup (Enginar Çorbası)

Ingredients

  • 3 artichokes
  • 1 carrot
  • 1 medium onion
  • 1 medium potato
  • 3 cups (200 ml each) water
  • 1/2 bunch dill
  • 1/2 small cup (~100 ml) olive oil
  • Salt, black pepper

Instructions

Peel, wash, and coarsely chop the artichokes, carrot, onion, and potato.

Cooking

Place all the vegetables in a pressure cooker and add 3 cups of water.

Close the lid and cook over medium-high heat until the steam indicator rises, then lower the heat and cook for another 5 minutes.

Open the lid and purée the cooked vegetables with a hand blender.

Add extra boiled water if needed to adjust the consistency.

Add the finely chopped dill, oil, salt, and black pepper, and return to the heat.

Stir until it begins to boil, then simmer over low heat for 10 minutes. Sprinkle with finely chopped dill and serve.

Note: If cooking in a regular pot, simmer over low heat for 15 minutes before serving.
