Artichokes Stuffed with Mushrooms (Mantarlı Enginar Dolması)

Ingredients

  • 4 artichokes
  • 250 g mushrooms
  • 2 medium tomatoes
  • 2 long green peppers
  • ½ bunch parsley
  • ½ bunch dill
  • ½ small cup (~100 ml) olive oil
  • 1 dessert spoon salt
  • 1 pinch fresh mint
  • 4 green onions, or
  • 1 small onion

Instructions

Clean the mushrooms well and chop them into large pieces.

Wash the herbs thoroughly and chop them coarsely.

Wash the tomatoes, peel them, and dice.

Wash the onion; if using green onions, chop coarsely, if using a regular onion, dice it.

Wash the peppers and chop them finely.

Finally, wash the artichokes and rub them with lemon juice (to prevent browning).

Cooking

Put all the vegetables except the artichokes into a large bowl, add the olive oil and salt, and mix.

Fill the center of the artichokes with the mixture using a spoon.

Arrange the artichokes neatly in a pressure cooker.

Add the remaining filling around the artichokes to cover the bottom of the pot.

Close the lid of the pressure cooker and cook over medium-high heat until the steam valve releases.

Once the valve releases, lower the heat and cook for 5 more minutes, then remove from the stove and serve.

Note: In a regular pot, the cooking time is 25 minutes over low heat.
