Artichokes with Meat (Etli Enginar)

Ingredients
- 4 artichokes
- 250 g diced meat
- 1 dry onion
- 2 dessert spoons tomato paste
- 2 medium tomatoes
- ½ small cup (~100 ml) olive oil
- 1 small cup (~100 ml) water
- Salt, black pepper
Instructions
Wash the artichokes and arrange them in the pressure cooker with the hollow side facing up.
Peel the onion and dice it finely.
Dice the tomatoes finely.
Wash the meat well and drain it in a colander.
Cooking
Put the meat in a separate pot and sear it over medium heat for 5 minutes.
Add the diced onion, then add the olive oil, tomatoes, 1 dessert spoon of tomato paste, salt, and black pepper; stir and cook over medium heat for 2 minutes.
Distribute the mixture from the other pot over the artichokes arranged in the pressure cooker.
Mix the water and 1 dessert spoon of tomato paste in a bowl, then add it to the pressure cooker and close the lid.
Cook over medium-high heat; once the steam indicator rises, lower the heat and cook for 5 more minutes.
Before serving, you can pour the accumulated liquid over the artichokes. Note: If cooking in a regular pot, cook over low heat for 15 minutes, then serve.
