Olive-Oil Celeriac with Orange (Zeytinyağlı Kereviz)

Ingredients

  • 1 kg celeriac
  • 1 large onion
  • 1 carrot
  • 1 small cup (~100 ml) olive oil
  • 1½ small cups (~150 ml) orange juice
  • 1 dessert spoon salt
  • juice of ½ lemon

Instructions

Peel the celeriac and cut into large cubes; soak in lemon water, then drain.

Peel the onion and dice it.

Peel the carrot. Cut it in half lengthwise and chop into large pieces.

Prepare the orange juice.

Cooking

Put the diced onion into a pressure cooker, add the oil, and sauté for 2 minutes.

Add the carrot and celeriac and sauté for another 2 minutes; then add the orange juice and salt, stir, and close the lid.

Cook over medium-high heat until the steam indicator rises, then cook for 2 more minutes over low heat and remove from the stove.

Once the steam has released, open the lid right away and transfer to a serving dish.

Note: If cooking in a regular pot, add the orange juice plus 1 cup (200 ml) of water. Once it starts boiling, cook over low heat for 15 minutes.
