Olive-Oil Okra (Zeytinyağlı Bamya)

Ingredients

  • ½ kg okra
  • 3 large tomatoes
  • 2 medium onions
  • 2 cloves garlic
  • ½ small cup (~100 ml) olive oil
  • 1 tsp granulated sugar
  • Juice of ½ a lemon
  • 1 dessert spoon salt

Instructions

Trim the stems of the okra into a cone shape. Wash thoroughly in plenty of water and drain in a colander.

Wash the tomatoes, peel them, and dice.

Peel and chop the onions and garlic.

Cooking

Put the onions, tomatoes, and garlic into the pressure cooker, place on the heat, and sauté for 5 minutes.

Add the okra and olive oil and stir. Then add the salt, sugar, and lemon juice, stir once more, and close the lid of the pot.

Cook over medium-high heat until the pressure valve releases steam.

Once the valve releases steam, lower the heat and cook for 5 more minutes, then serve hot or cold.

Note: If using a regular pot, follow the same method. Once it starts boiling, lower the heat and cook for a total of 15 minutes.
