Chicken and Okra Stew (Tavuklu Bamya)

Ingredients
- 1/2 kg okra
- 200 g diced chicken or turkey
- 2 medium onions
- 3 medium tomatoes
- 1/2 small cup (~100 ml) olive oil
- 1 dessert spoon tomato paste
- 1 1/2 tbsp lemon juice
- 1 dessert spoon salt
Instructions
Wash the okra and trim the stems into a cone shape.
Pour lemon juice into a bowl of water, soak the trimmed okra in it for 10 minutes, then drain in a colander.
Wash the tomatoes and onions, peel them, and dice finely.
Cooking
Put the chicken in a pressure cooker and stir over medium heat until it releases and reabsorbs its liquid.
Add the olive oil first, then the onions and tomatoes, and sauté for 5 minutes.
Then add the tomato paste, okra, lemon juice, and salt, sauté for another 5 minutes, and close the lid of the pot.
Once the steam indicator rises, reduce the heat and cook for another 5 minutes, then remove from the heat.
Note: If using a regular pot, follow the same method. Before closing the lid, add 1 small cup of water and cook over low heat for 20 minutes.
