Olive-Oil Borlotti Beans (Zeytinyağlı Barbunya)

Ingredients

  • 1 kg fresh borlotti (cranberry) beans
  • 1 carrot
  • 1 small potato
  • 3-4 medium tomatoes
  • 2 medium onions
  • 2 cloves garlic
  • 1 small cup (~100 ml) olive oil
  • 1 pinch parsley
  • 1 small cup (~100 ml) water
  • 1 tsp sugar
  • 2 tsp salt

Instructions

Clean the beans and add them to a pot of boiling water. Boil for 5 minutes to draw out their bitter liquid, then drain.

Cut the onions, carrot, potato, and tomatoes into cubes.

Cooking

Add all the cleaned and chopped vegetables along with the drained beans to the pressure cooker.

Add the olive oil, salt, sugar, and water, stir, and close the lid of the pot.

Cook over medium-high heat until the pressure line appears, then cook for another 5 minutes over low heat.

Open the lid, transfer to a serving plate, and top with a pinch of parsley.
