Borlotti Beans with Meat

Ingredients
- 1 kg fresh borlotti (cranberry) beans
- 200 g diced veal
- 1 large onion
- 1 large potato
- 2 medium tomatoes
- 1 tbsp tomato paste
- 1 dessert spoon red pepper powder
- 1 dessert spoon salt
- 1 cup (200 ml) water
Instructions
Clean the beans, put them in a regular pot, add enough water to cover them, boil until their bitter liquid is drawn out, then drain.
Wash the meat thoroughly and drain.
Wash the onions, tomatoes, and potato, peel them, and cut into cubes.
Cooking
Put the meat into the pressure cooker and stir over medium heat until it absorbs its liquid.
Then add the olive oil and onion and sauté for 5 minutes, then add the tomatoes and stir.
Add the beans, potato, salt, and water in turn, then stir and close the lid of the pressure cooker.
Cook over medium-high heat until the pressure valve releases steam.
Once it does, reduce the heat and cook for another 10 minutes, then remove from the heat.
Once the steam is released, open the lid and serve.
Note: If using a regular pot, follow the same steps and cook over low heat for 30 minutes.
