Zucchini Salad with Yogurt (Yoğurtlu Kabak Salatası)

Ingredients

  • 4 green zucchini
  • 2 carrots
  • 2 cloves garlic
  • 1 cup (200 ml) yogurt
  • ½ bunch dill
  • ½ small cup (~100 ml) olive oil
  • 1 small cup (~100 ml) finely chopped walnuts
  • 1 tsp salt

Instructions

Wash the zucchini and carrots, peel them, and grate.

Wash the dill and chop it finely.

Peel the garlic and mince it finely.

In a separate bowl, whisk together the yogurt and garlic.

Method

Put the grated zucchini and carrots into a wide pot and place it on the heat.

Sauté for about 10 minutes, stirring constantly, until the vegetables release and reabsorb their liquid, then remove from the heat.

Transfer to another bowl to cool.

Once cooled, add the salt, olive oil, and the garlic-yogurt mixture, and mix thoroughly.

Finally, add the dill and walnuts, mix one last time, and serve.
