Baked Zucchini Fritters (Fırında Mücver)

Ingredients

  • 4 medium zucchini
  • 1 medium carrot
  • 3 green onions
  • 1 handful parsley
  • 1 handful dill
  • 1 cup (200 ml) crumbled white cheese
  • 2 eggs
  • 4 tbsp olive oil
  • 1 dessert spoon baking powder
  • 1 dessert spoon salt
  • 1 dessert spoon cumin
  • 1 dessert spoon black pepper
  • Flour

Instructions

Peel the zucchini and carrot and grate them.

Wash the dill and parsley and chop finely.

Grate the white cheese.

Wash the green onions and chop them very finely.

Cooking

Squeeze the grated zucchini well with your hands to remove the excess water. (You can also use a cheesecloth.)

Put it in a large mixing bowl and add the grated carrot along with the chopped parsley and dill.

Crack 2 eggs into the mixture, then add the grated cheese, 4 tablespoons of olive oil, salt, and spices, one after another.

Mix well, then add the baking powder, and gradually stir in flour until you get a thick, spoonable batter. Adjust the consistency as needed.

Line a baking tray with parchment paper and spoon the fritter mixture onto it.

Once done, bake in a 180°C (355°F) oven with top-bottom heat until golden brown on top, about 20 minutes.

Serve hot.
