Green Lentil Soup (Yeşil Mercimek Çorbası)

Ingredients
- 1 cup (200 ml) green lentils
- 1 carrot
- 1 potato
- 1 onion
- 1 tbsp tomato paste
- Half a small cup (~100 ml) olive oil
- 1 dessert spoon cumin
- 1 tsp thyme
- 1 tsp curry powder
- 1 dessert spoon salt
- 1 tsp black pepper
- 5 cups (200 ml each) water (add boiling water if needed to adjust the consistency)
Instructions
Put the lentils into a pot, pour boiling water over them, close the lid, and let sit for 20 minutes. Then drain and discard the dark-colored water.
Put the olive oil into another pot. Dice the onion and sauté it. Then add the finely chopped carrot and sauté for 5 minutes.
Add the tomato paste and stir. Add the drained lentils to the pot and pour in the water.
Simmer the soup for 30 minutes, stirring occasionally. Turn off the heat and blend into a puree.
Return the soup to the heat, add the spices, and simmer for 5 more minutes.
