Tomato Soup (Domates Çorbası)

Ingredients
- 6-7 tomatoes
- 3-4 bay leaves
- 1 handful parsley
- 1 medium onion
- 2 garlic cloves
- 4 tbsp olive oil
- 3 cups (200 ml each) water
- Salt, black pepper
- Kashar cheese
Instructions
Peel the tomatoes and coarsely chop them along with the onion, garlic, and parsley.
Add the bay leaves and place everything in a pressure cooker.
Cooking
Add 3 cups of water to the pressure cooker and boil over medium-high heat for 5 minutes.
Remove from the heat, take out the bay leaves with a strainer, and blend the rest with a hand blender.
In a new medium-sized pot, toast the flour and oil together until the raw flour smell disappears, to give the soup body, then add all the vegetables to this pot. (Toasting time is about 3 minutes.)
Simmer together, stirring, for 10 minutes, then add salt and black pepper.
Finally, simmer for another 5 minutes, then remove from the heat and serve topped with kashar cheese.
