Ingredients
- 1 soup bowl red lentils
- 4 medium tomatoes
- 1 medium carrot
- 1 medium potato
- 1 medium onion
- 1/2 small cup (~100 ml) olive oil
- 3 cups (200 ml each) water
- Salt, ground red pepper (paprika)
Instructions
Wash, peel, and coarsely chop the tomatoes, onion, potato, and carrot.
Wash the red lentils and drain in a colander.
Cooking
Add the lentils and all the other vegetables to a pressure cooker, pour in 3 cups of water, and cook over medium-high heat.
Once the steam indicator rises, reduce the heat and cook for another 5 minutes.
Release the steam, open the lid, and blend with a hand blender until smooth.
Add extra boiled water if needed to adjust the consistency.
Add the olive oil, salt, and ground red pepper, and return to the heat.
Simmer over medium heat, stirring constantly, for 15 minutes, then serve.
