Ingredients
- 1 cup (200 ml) green lentils
- 4 spring onions
- 1 red bell pepper (kapya)
- 1 green pepper
- ½ bunch parsley
- ½ bunch dill
- 1 handful fresh mint, or
- 1 tbsp dried mint
- 1 small cup (~100 ml) boiled corn
- 6 tbsp olive oil
- Juice of ½ a lemon
- 1 tbsp pomegranate molasses
- 1 tsp salt
Instructions
Wash the lentils and drain.
Put the dressing ingredients into a bowl and mix well.
Wash the herbs thoroughly and chop them finely.
Wash the peppers and chop them finely.
Method
Put the lentils into a regular pot, add enough water to cover them, and place on the heat.
Boil until soft (about 15 minutes).
Drain in a colander and let drain thoroughly.
Transfer the lentils to a serving plate. Add the peppers, herbs, and corn, and toss to combine.
Drizzle the prepared dressing over it and mix thoroughly.
Let it chill in the refrigerator, then serve.
