Pumpkin Soup (Balkabağı Çorbası)

Ingredients

  • 2 slices pumpkin
  • 3-4 bay leaves
  • 1 medium onion
  • 2 cloves garlic
  • ½ small cup (~100 ml) olive oil
  • 1 tbsp flour
  • 3 cups (200 ml) water
  • Salt, black pepper

Instructions

Coarsely chop the peeled pumpkin, onion, and garlic.

Add the bay leaves and put everything into the pressure cooker.

Cooking

Add 3 cups of water to the pressure cooker.

Cook over medium-high heat until the steam indicator rises, then lower the heat and cook for 5 more minutes.

After removing from the heat, take out the bay leaves with a strainer and purée the rest with a hand blender.

In a new medium pot, toast the flour and oil together to thicken the soup, until the raw flour smell disappears, then add all the vegetables to this pot. (roasting time approx. 3 min.)

Simmer together, stirring, for 10 minutes, then add salt and black pepper.

Finally, simmer for 5 more minutes, then remove from the heat and serve.

Note: Adding the hot soup to the flour-and-oil mixture may cause splattering. To prevent this, let the flour and oil cool slightly before adding the soup in gradually.
