Yogurt and Rice Soup (Yayla Çorbası)

Ingredients

  • 1 small cup (~100 ml) rice
  • 2.5 cups (200 ml) water
  • 1 cup (200 ml) strained yogurt
  • 1 egg yolk
  • 6 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp dried mint
  • 1 dessert spoon salt
  • 1 dessert spoon ground red pepper or pepper flakes

Instructions

Wash the rice thoroughly.

In a large bowl, whisk together 1 cup of yogurt, 1 cup of water, the egg yolk, salt, and olive oil until well combined.

Cooking

Put the washed rice and 1.5 cups of water into a pot and place it on the stove.

Cook until the rice is fully softened.

Slowly add the yogurt-egg-salt-olive oil mixture from the bowl into the pot while stirring constantly and quickly.

Add the turmeric and mint, then stir until the soup comes to a boil.

Once it starts boiling, let it boil for 5 more minutes, then remove from the heat.

In a separate pan, melt the butter, add the red pepper, and lightly sizzle it, then pour it over the soup and serve.
