Creamy Milk Broccoli Soup (Sütlü Brokoli Çorbası)

Ingredients

  • 700 g broccoli
  • 1 potato
  • 1 yellow onion
  • 1 carrot
  • ½ small cup (~100 ml) olive oil
  • 1 tbsp butter
  • 2 cups (200 ml each) water or stock
  • 1 cup (200 ml) milk
  • 1 dessert spoon salt
  • 1 tsp black pepper
  • 1 tsp ground red pepper or red pepper flakes
  • ½ tsp turmeric

Instructions

Break the broccoli into florets and wash thoroughly.

Peel the potato, onion, and carrot, and cut into large pieces.

Cooking

Put all the vegetables into the pressure cooker and add 2 cups of water or stock.

Cook over medium-high heat until the steam indicator rises, then lower the heat and cook for 5 more minutes.

Remove from the heat and open the lid once the steam has fully released.

Puree the vegetables with a blender.

Return the pot to the heat and add 1 cup of milk, the olive oil, butter, salt, and spices.

Stir continuously over medium heat until it comes to a boil. If it needs thinning, add hot water.

After boiling for 5 more minutes, remove from the heat.

Serve. Note: If cooking the vegetables in a regular pot, boil for 15-20 minutes and follow the same method.
