Broccoli Pancakes (Brokoli Pankek)

Ingredients

  • 300 g broccoli
  • 1 carrot
  • 1 bowl parsley
  • 1 egg
  • 2 small cups (~100 ml each) milk
  • 1 small cup (~100 ml) flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 dessert spoon baking powder

Instructions

Wash the broccoli thoroughly and trim the florets.

Wash and peel the carrot, then grate it finely.

Wash the parsley and chop it finely.

Cooking

Add the chopped broccoli, carrot, and parsley to a large bowl.

Add 1 egg and mix.

Add the milk and mix again.

Add the flour, baking powder, salt, and black pepper, and mix well.

Brush a small pan with vegetable oil and place it over low heat.

Spoon in 1 tablespoon of batter, cook one side first, then flip to cook the other side.

Once golden, transfer to a serving plate and serve with yogurt.

Note 1: If desired, whole wheat or spelt flour can be used instead. Note 2: The remaining broccoli stems can be used for soup.
