Baked Broccoli with Béchamel Sauce

Ingredients
- 700 g broccoli
- 2 carrots
- 3 cups (200 ml) water
- 1 cup (200 ml) grated kashar cheese
- 2 tbsp flour
- 2 cups (200 ml) milk
- ½ small cup (~100 ml) olive oil
- 1 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
Instructions
Separate the broccoli into florets and wash thoroughly.
Wash the carrots, peel them, and slice into rounds.
Cooking
Put the washed broccoli and carrots into a large pot.
Add enough water to cover them and boil for 15 minutes, then let them cool in a colander.
Meanwhile, put the olive oil and butter into a large pan.
Once melted, add 2 tablespoons of flour; once it turns golden, add the milk and stir continuously.
Once it thickens, add the salt and black pepper and turn off the heat.
Place the broccoli and carrots in a baking dish and spread the béchamel sauce evenly over them.
Sprinkle the kashar cheese on top and bake at 170°C (340°F) until the cheese turns golden as desired. (About 15 minutes)
Serve hot.
Note: If desired, cauliflower can be added along with the broccoli — use 350 g broccoli and 530 g cauliflower. Note: To prevent the béchamel from becoming lumpy, let the toasted flour cool slightly before adding the milk, and stir constantly as you add it.
