Vegetable Soup (Sebze Çorbası)

Ingredients
- 2 zucchini
- 1 artichoke
- 1 carrot
- 1 celeriac (optional)
- 1 medium onion
- 1 medium potato
- 3 cups (200 ml) water
- ½ bunch dill
- ½ small cup (~100 ml) olive oil
- 2 tbsp butter
- Salt, black pepper
Instructions
Peel all the vegetables, wash them, and cut into large chunks.
Cooking
Put all the vegetables into a pressure cooker and add 3 cups of water.
Close the lid and cook over medium-high heat; once the steam indicator rises, lower the heat and cook for 10 more minutes.
After opening the lid, purée the cooked vegetables with a hand blender.
If needed, add extra boiled water to adjust the consistency.
Add finely chopped dill, oil, salt, black pepper, and butter, then return to the stove.
Stir until it comes to a boil, then simmer over low heat for 10 minutes, and serve topped with finely chopped dill.
