Potato Soup (Patates Çorbası)

Ingredients

  • 5 medium potatoes
  • 1 medium onion
  • 1/2 small cup (~100 ml) olive oil
  • 1 small cup (~100 ml) milk or 4 tbsp cream
  • 1 bowl chopped parsley
  • 3 cups (200 ml each) water
  • Salt, ground red pepper (paprika), cumin, black pepper

Instructions

Wash, peel, and coarsely chop the potatoes and onion.

Cooking

Add the potatoes and onion to a pressure cooker, pour in 3 cups of water, and cook over medium-high heat.

Once the steam indicator rises, reduce the heat and cook for another 5 minutes.

Release the steam, open the lid, and blend with a hand blender until smooth.

While simmering the soup, add extra boiled water if needed to adjust the consistency.

Add the olive oil, salt, ground red pepper, and cumin, and continue stirring.

Simmer over medium heat, stirring constantly, for 10 minutes.

Turn off the heat, add the chopped parsley, stir, and cover with a lid.

Let it rest for 10 minutes, then serve.
