Asparagus Soup (Kuşkonmaz Çorbası)

Ingredients

  • 6-7 stalks asparagus,
  • 1 medium onion,
  • 2 cloves garlic,
  • 3 tbsp lemon juice,
  • 3 tbsp olive oil,
  • 4 tbsp cream,
  • 1½ cups (200 ml each) water,
  • Salt, black pepper

Instructions

First, wash the asparagus thoroughly.

Then trim about 3 cm off each end, peel, and cut into large pieces.

Wash the onion and garlic, then peel and cut into large pieces.

Cooking

Add the chopped asparagus, onion, and garlic to the pressure cooker.

Add the lemon juice and water, then close the lid.

Start cooking over medium-high heat; once the steam indicator rises, lower the heat and cook for 5 more minutes.

After opening the lid, puree the cooked vegetables with a hand blender.

If needed, add extra boiled water to adjust the consistency.

Add the olive oil, salt, black pepper, and cream, and return to the heat.

Stir until it comes to a boil, then simmer over low heat for 10 minutes and serve. Note: For garnish, it can be served with the tips of the asparagus.
