Olive-Oil Braised Stuffed Zucchini (Zeytinyağlı Kabak Bayıldı)

Ingredients
- 3 large zucchini
- 3 medium tomatoes
- 2 medium green pointed peppers
- 2 medium onions
- 3 garlic cloves
- 1/2 small cup (~100 ml) olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 handful parsley
Instructions
Wash all the vegetables and peel them, except for the peppers.
Cut the zucchini in half lengthwise, then cut each half crosswise in the middle.
Scoop out the flesh with a spoon and collect it in a separate bowl.
Meanwhile, dice the onion, garlic, peppers, and tomatoes.
Add them to the scooped-out zucchini flesh and place in a separate bowl.
Add the olive oil, salt, and black pepper to the mixture in the bowl and stir.
Cooking
Fill the hollowed-out zucchini with the prepared mixture.
Arrange the stuffed zucchini one by one in a pressure cooker.
Carefully pour any remaining filling mixture around the zucchini into the pot.
Finally, drizzle olive oil over the top and close the lid of the pressure cooker.
Cook over medium-high heat until the steam indicator rises.
Once it rises, reduce the heat and cook for another 3 minutes.
Let it rest a little, then open the lid and transfer the zucchini to a serving dish.
Sprinkle a handful of parsley on top.
Chill in the refrigerator before serving.
Note: If making it in a regular pot, use a wide pot. The cooking time is 15 minutes after it starts boiling. No water should be added.
