Beet Vegetable Soup (Pancarlı Sebze Çorbası)

Ingredients

  • 2 small beets
  • 2 carrots (medium)
  • 1 small potato
  • 1 onion
  • 1 slice pumpkin
  • 1 dessert spoon salt
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 4 cups (200 ml each) water
  • Half a small cup (~100 ml) olive oil

Instructions

Wash the beets, peel them, and cut into large chunks.

Wash the carrots, peel them, and chop.

Peel the pumpkin and potato and cut into large chunks.

Wash the leek thoroughly and cut into large pieces.

Dice the onion.

Method

Put the oil into the pressure cooker and add the onion. Sauté for 5 minutes.

Then add the chopped vegetables and stir. Pour in the water.

Close the lid of the pressure cooker and cook for 7-8 minutes after it starts releasing steam.

Remove from the heat and open the lid once all the steam has released. Blend the vegetables.

Return the soup to the heat, add the salt and spices, and simmer for 5 more minutes.

If the consistency is too thick, add boiling water to taste.

Note: If using a regular pot, follow the same steps; only the boiling time should be 20-25 minutes.
