Ingredients
- 500 g Jerusalem artichokes
- 1 large carrot
- ½ bunch dill
- 1 cup (200 ml) strained yogurt
- 5 tbsp olive oil
- 5 tbsp lemon juice
- 1 small cup (~100 ml) chopped walnuts
- 1 tsp salt
Instructions
Wash the Jerusalem artichokes, peel them like potatoes, and place them in a bowl of water to prevent browning.
After peeling, drain them in a colander.
Peel the carrot.
Wash the dill and chop it finely.
Preparation
Grate the Jerusalem artichokes into a large bowl. Then grate the carrot.
Add the yogurt, dill, lemon juice, walnuts, and salt; mix well.
Transfer to a serving plate.
Serve garnished with dill or coarsely chopped walnuts.
