Mixed Vegetable Stew (Türlü Sebze Yemeği)

Ingredients
- 3 tomatoes
- 2 eggplants
- 2 zucchini
- 2 potatoes
- 2 red (bell) peppers
- 2 green peppers
- 2 medium onions
- 3 cloves garlic
- ½ small cup (~100 ml) olive oil
- 1 tbsp tomato paste
- 1 dessert spoon salt
- 1 tsp black pepper
Instructions
Peel the eggplants in stripes and cut into large chunks. Fill a large bowl with water and salt, add the eggplants, and let them soak for 10 minutes to remove their bitterness, then drain.
Wash all the other vegetables, peel them, and cut into large chunks.
Cooking
Put the onion, garlic, and peppers into a pressure cooker, place it on the stove, add the olive oil, and sauté for 5 minutes.
Then add all the vegetables and sauté for another 5 minutes; add the tomato paste, black pepper, and salt, give it a final stir, and close the lid of the pot.
Cook over medium-high heat until the steam valve releases.
Once the steam valve releases, lower the heat and cook for another 5 minutes, then remove from the stove.
Note: If cooking in a regular pot, follow the same steps, adding 1 small cup (~100 ml) of water, and cook over low heat for 20 minutes.
