Eggplant Moussaka (Patlıcan Musakka)

Ingredients

  • 5 eggplants
  • 3 large tomatoes
  • 1 large onion
  • 2 cloves garlic
  • 150 g ground meat
  • 2 green peppers
  • 1 dessert spoon tomato paste
  • 1 tsp black pepper
  • 1 tsp red pepper powder
  • 1 tsp salt

Instructions

Wash the eggplants, peel them in stripes (leaving some skin), and cut into large cubes.

Add 1 tablespoon of salt to a bowl of water, place the eggplants in it, and let them sit for 15 minutes to draw out their bitterness. Then drain in a colander.

Dice the tomatoes, onions, and peppers.

Cooking

Put the ground meat into a pressure cooker, place over heat, and stir continuously until its liquid evaporates.

Add the onion and oil in turn and sauté for 2-3 minutes; then add the peppers, tomatoes, and tomato paste and stir.

Finally add the spices and salt and stir, add the eggplants, and after one last stir close the lid of the pot.

Cook over medium-high heat until the pressure valve releases steam.

Once the steam valve releases, reduce the heat and cook for another 4 minutes, then serve.

Note: If using a regular pot, cook over medium heat and reduce the heat once it starts boiling. Total cooking time is 20 minutes.
