Spinach with Ground Meat (Kıymalı Ispanak)

Ingredients
- 1/2 kg spinach
- 50 g ground meat
- 1 tbsp rice
- 1 tbsp tomato paste
- 1/2 small cup (~100 ml) olive oil
- 1 tsp salt
- 1/2 small cup (~100 ml) water
- 1 onion
Instructions
First trim the roots off the spinach and pick over the leaves. Fill a deep bowl with water and submerge the spinach in it.
Wash it in fresh water 3-4 times until the water runs clean, then finally soak it in vinegar water for 10 minutes.
Rinse once more, drain in a colander, and if possible, pat dry before chopping coarsely.
Peel the onion and dice it finely. Wash the rice.
Cooking
Put the ground meat in a regular pot and place over heat.
Stir until it releases and reabsorbs its liquid, then add the oil and diced onion.
Sauté for 3-4 minutes, then add the tomato paste and stir again.
Add the rice and 1/2 small cup of water, stir, and close the lid.
Cook over low heat until the rice is done.
Add the chopped spinach and salt, mix well, and close the lid again.
Cook for 10 minutes, then remove from the heat and serve.
