Olive-Oil Leeks with Orange (Zeytinyağlı Pırasa)

Ingredients

  • 1 kg leeks
  • 2 carrots
  • 2 medium onions
  • 1 small cup (~100 ml) freshly squeezed orange juice
  • ½ small cup (~100 ml) olive oil
  • 2 tbsp rice
  • 1 dessert spoon salt
  • 1 tsp sugar

Instructions

Wash the leeks and cut them into 2 cm thick slices.

Wash and peel the carrots, cut in half, then chop.

Peel the onions and slice them into half-moons.

Squeeze the orange.

Wash the rice.

Cooking

Put the chopped onions, leeks, and carrots into the pressure cooker.

Add the olive oil, place on the stove, and sauté for 5 minutes while stirring.

Then add the rice, orange juice, and salt; mix well and close the lid of the pressure cooker.

Cook over medium-high heat until the pressure indicator rises, then cook for another 5 minutes on low heat and remove from the stove.

Once the steam has released, open the lid and transfer to a serving plate.

Let it cool, then serve.

Note: If cooking in a regular pot, follow the same method. Add 1 cup (200 ml) of orange juice. Once it begins to boil, cook on low heat for 20 minutes.
